In general, make generic names lowercase:

cheddar, stilton, gouda, camembert, brie, gorgonzola, chevre, gruyere, fetta, parmesan, raclette, edam, boursault, boursin, caciocavallo, fontina, provolone, mozzarella, bocconcini, ricotta, limburger, manchego, pecorino

Uppercase when:

There’s a proper noun involved that is unfamiliar as a generic cheese term:

St Andre

St Nectaire

or it’s the proprietary name of a particular brand of cheese:

Gippsland Blue

Brie de Meaux

Parmigiano Reggiano

When buying parmesan cheese, you’ll find that Parmigiano Reggiano will cost twice as much as Grana Padano.
