Uppercase when:
Theres a proper noun involved that is unfamiliar as a generic cheese term:
St Andre
St Nectaire
or its the proprietary name of a particular brand of cheese:
Gippsland Blue
Brie de Meaux
Parmigiano Reggiano
When buying parmesan cheese, youll find that Parmigiano Reggiano will cost twice as much as Grana Padano.
